This simple recipe for wedding cake icing can be
used on almost any cake, but when used to frost a wedding
cake,
it's absolutly beatiful.
The icing can be spread smooth on the wedding cake
with extra being piped on through a bag to make decorative borders
and florettes.
Ingredients:
Boil the sugar and water together in a medium saucepan
without stiring until it reaches 242 degrees.
beat egg whites until stiff but not dry. slowly
pour in a thin stream of the sugar syrup while beating constantly.
add the cream of tartar and vanilla, and beat until thick enough
to spread.
use a rubber spatula or frosting knife to spread
in an even layer around sides and top of cake.
beat remaining icing until cool and stiff and place
in piping bag for decorating cake. (food coloring may be added
to remaining icing at this point). when frosting on cake has
hardened, pipe on decrorative borders.
