Growing up as kids my grandmother used to make
this recipe for chicken legs at least once a week. We often tried
to steal each others skins (and now that i'm all grown up and make
it myself, we often still do!).
This is a simple and inexpensive family meal that can easily feed
a large crowd. The recipe is written to feed 4 people, but can
be easily adjusted. Plan on one whole leg or 2 drums/thighs per
person.
- 4 whole chicken legs, skin on or 8 pieces drums and/or thighs
with skin
- 1/4 cup italian seasoning
- salt and pepper
- 1/4 cup light brown sugar
- 3 tablespoons melted butter
Pre-heat oven to 375 degrees.
Rinse chicken and pat dry with paper towel. season both sides
well with salt, pepper and italian seasoning. Arrange in baking
dish, skin side up and bake for 35 minutes.
Remove from oven and brush chicken skins with melted butter. Sprinkle
brown sugar over chicken and return to oven for another 15-20 minutes.
Sugar will melt and carmelize forming a sweet and crunchy glaze
on the skin. (A kids favorite part!)
This dish goes well with Green Beans
in Balsamic Reduction.
