I always grow green beans in the garden and
often plant them up to 3 times a year.
This recipe for green beans with a balsamic vinegar reduction
is one that I quickly threw together one night. it's fast, simple
and can be served as part of an easy family dinner or an elegant
meal.
The balsamic vinegar and white wine combine in the reduction to
give the beans a slightly sweet glaze and the quick cooking time
lets the beans retain their crispness and fresh green color.
- 2 cups fresh green beans cleaned and trimmed
- 1/2 cup slivered onions
- 2 cloves garlic, minced
- 1/4 cup white wine (I prefer Riesling)
- 3 tablespoons balsamic vinegar
- 3 tablespoons butter
- salt and pepper to taste
- Slivered almonds (optional)
In a large skillet, melt the butter and add green beans, onion
and garlic. saute for 3-4 minutes over medium high heat until onions
start to become translucent. add white wine and vinegar, stirring
well and tossing beans to fully coat. reduce heat to medium low
and cook for 5-6 minutes more, allowing vinegar and wine to reduce
some. finish with 1 tablespoon butter, stirring to fully melt and
incorporate.
transfer to serving bowl and if desired top with slivered almonds.
