This Valentine's day salad recipe is a great way to kick of any romantic meal. With all the red color in the mix, this salad is sure to be a hit for Valentines or Christmas.

The raspbery vinagrette dressing is a pure delight on any salad. I like my dressing a little heavier on the vinegar and lighter on the oil, but feel free to adjust it to your (or your valentine's) taste.

Valentine's Day Salad Recipe

1 Small head Romaine lettuce
1 Small head Red leaf lettuce
1 head Radiccio
1 Red onion, sliced thin
1 carrot, julliened
1 small cucumber, sliced thin
1/4 cup toasted walnuts
1/2 cup crumbled blue cheese or gorgonzola cheese
1/2 cup dried mixed raisins or cranberries

Wash all lettuce and squeeze or spin to dry. Add all ingredients to large salad bowl, season with salt and pepper then toss to combine.

Just before serving the valentine's salad, give the dressing a mix. Serve dressing on the side.
