This is a delicious recipe for
turtle cookies right from my Grandmother. She used to make these
cookies when friends would come over to play cards and always
made some extra for us kids. (that's if my grandfather didn't
get to them first!)
Chocolate covered Turtle cookies
are easy to make and this is a recipe you can let the kids help
with.
Preheat oven to 350 degrees
Cookies:
- 1 1/2 cups sifted flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup butter or margarine
- 1/2 cup packed brown sugar
- 2 eggs (one seperated)
- 1/4 tsp. vanila
- 1/8 tsp. maple syrup or flavoring (optional)
- pecan halves
Chocolate Drizzle:
- 2 squares or 1/3 cup chocolate chips
- 1/4 cup milk
- 1 tablespoon margarine or butter
Cream butter and brown sugar until fluffy. Add 1 egg and 1 egg
yolk, beat well. blend in vanilla and maple syrup if using. gradually
blend in dry ingredients. the dough will be soft, you can refridgerate
for 20 minutes if desired. ( this often helps in the rolling proccess.)
Arrange pecan halves in groups of 3 in a star patern on parchment
lined baking sheet. Take tablespoonfuls of dough and roll into
a ball. dip bottoms in reserved egg white and press lightly (so
you don't break the pecans) onto pecan halves. bake for 10 minutes.
In double boiler combine chocolate, milk and butter and heat until
chocolate is fully melted and mixture is smooth. allow cookies
to cool and drizzle chocolate over them.
