Strawberries are available almost year round
in most supermarkets and this recipe for strawberry shortcake is
the perfect dessert for spring and a great way to bring a touch
of summer to the winter months.
strawberry shortcake is a great dessert to bring to any pot luck,
church social or family gathering.
Ingredients:
- 4 eggs- separated
- ¼ tsp.
Cream of tartar
- 1 cup flour
- 1/3 cup water
- ¼ cup salad or
vegetable oil
- 1 ½ tsp. Baking powder
- ½ tsp. Vanilla
extract
- 2 qt. Strawberries chopped and
macerated
- 1 ½ pints
whipping cream- whipped
- ¾ cups sugar
preheat oven to 325
degrees and line bottom of 10 inch spring form pan with parchment
paper.
In a large bowl, beat egg whites
and cream of tarter till stiff peaks form. Add ¼ cup sugar,
two tablespoons at a time beating well after each addition till
well dissolved. Whites should stand in stiff peaks.
Iin separate
bowl beat egg yolks, flour, water, oil, baking powder, vanilla
and1/2 cup sugar until well mixed.
With wire whisk fold
flour mixture into egg whites just until blended. Pour into 10
inch spring form pan. Bake about 1 hour. Cake is done when center
springs back when lightly pressed. Using thread, cut cake
horizontally to make 3 layers. Spoon strawberry onto first layer,
then whipped cream, top with cake, strawberry, whipped cream. Finish
with third cake layer, frost with remaining whipped cream and top
with remaining strawberries.
