Strawberry Omelet Recipe

Another recipe from our vintage menu collection, Strawberry Omelets are a perfect way to start Valentine's day or for entertaining overnight guests. The Recipe starts with a basic french omelet and is filled or topped with macerated strawberries. Other variations include minced lobster or shrimp.

I really like this omelet recipe in the spring when the strawberries are fresh from the garden. make up a big batch of macerated strawberries when you can and use them for omelets, pancakes, or strawberry shortcake. Macerated strawberries are are also great on chocolate cake with whipped cream.

Strawberry Omelet Recipe

Prepare the French Omelet:

• 6 eggs
• 3/4 tsp salt
• fresh pepper
• 2 tbs. butter

Melt the butter in an omelet or large fry pan over medium heat. Beat eggs just enough to break yolks and add salt and pepper. pour a little of the melted butter into the egg mix and put the pan back on the heat and add the eggs to the pan.

As the eggs cook on the bottom and sides, prick any bubbles with a fork to allow the egg on top to penetrate the cooked surface. You can also lift the edges and tilt the pan slightly to let uncooked egg run under the cooked. When eggs are thickened but still soft, spread macerated strawberries over half of omelet and fold over. cook a minute more and remove to plate. garnish with whole strawberries if desired.

Macerated strawberries:

• 1 pint strawberries, washed and hulled
• 1/4 cup sugar

chop strawberries and add to bowl with sugar. mix well and let stand for several hours
