The key to pan grilling
a steak indoors is to start with a good steak and a hot oven.
I prefer to use rib eyes or sirloins for this recipe, but skirt
steaks work well too. you will need a good cast
iron skillet for this recipe.
A little hint for tender steaks: always let them rest at room temperature
for at least 30 minutes before cooking. placing a cold steak on a
hot grill or pan binds the muscle meat and makes for a tough steak.
Pan Grilled Steaks
- 1 sirloin strip or ribeye
per person
- salt
- pepper
- garlic
powder
Pre-heat oven to 500 degrees and place rack in middle of oven.
Season the steaks on both sides with salt, pepper and garlic powder.
allow to rest for 30 minutes at room temperature.
on the stove top, heat the cast iron pan for about 5 minutes on
high. Place the steaks in the pan and as soon as it begins to smoke
place pan in oven. cook for about 4 minutes then turn steaks over
and cook an additional 4 minutes. this will produce a medium rare
steak. cook 1 minute more per side for medium and 2 minutes more
per side for well don steak.
remove steaks from pan and
allow to rest for 2-3 minutes before cutting.
