Mexican Chicken Dinner

This is one of our favorite easy dinner recipes. It's a twist on Chicken Parmesean in that instead of spagetti sauce it uses salsa. Athough any jared salsa will work, I often make my own roasted red pepper salsa to have as an appetizer and to use with this Mexican Chicken Recipe.


Mexican Chicken Recipe

  • 1 jar salsa
  • 4 boneless skinless chicken breasts
  • juice of 1/2 lemon
  • 2-3 cups shredded Monteray Jack cheese
  • Salt & pepper

place the chicken breast in a baking dish and squeeze juice of 1/2 lemon onto chicken. season chicken with salt & pepper. cover evenly with salsa then shredded cheese. cover with aluminum foil and bake in a 375 degree oven for 30 minutes. remove foil and cook an additional 10 minutes or until cheese is slightly browned and chicken is fully cooked.

best served with rice
