Spinach Salad

Apple and Spinach Salad

This salad recipe made with fresh spinach and apples is not only healthy, but quick and easy to make for a fast lunch. You can make a healthy salad and the dressing in the morning before leaving, and combine them when your ready for lunch.

To keep the apples from turning brown, toss them in a little lemon juice.

Spinach Salad Recipe

  • 2 bags fresh baby spinich
  • 2 Granny smith apples, chopped (remember to toss with lemon juice to prevent browning)
  • 1/2 cup cashews
  • 1/4 to 1/2 cup mixed raisins and or dried cherries
  • 1/4 cup sugar or splenda
  • 1/4 cup extra virgin olive oil
  • 3-4 tbs. balsamic vinegar
  • 1/4 tsp. celery salt

combine first 4 ingredients in a bowl and toss to combine.

In a separate bowl, whisk together oil, vinegar, sugar and celery salt.

When your ready for lunch (this salad is great anytime by the way!) pour dressing on spinach and apple mix and toss to combine. serve immediately after adding dressing.
