Fiesta Fruit Delight

Fruit Appetizer

As many a chef or party planner will tell you, presentation is everything when it comes to food. Children and adults alike are attracted to colorful foods, and this Fiesta Fruit Delight is a pleasure to behold, and healthy to eat! I served this at a kid's party, and everybody gobbled it up!


Fiesta Fruit Delight

Ingredients:

  • Diced fresh fruit - nothing need be too exact here; choose what's in season. Canned fruit is okay, but fresh is preferred. Some ideas include strawberries, mangos, pineapples, cantaloupe, pears, seedless grapes, honeydew melon.
  • Small 1/2 inch chunks of mild cheese (cheddar, mozzarella, white American)
  • Dried banana chips (visit the health food section of your grocery store)
  • Maraschino cherries in a jar
  • Graham crackers
  • Wheat Germ
  • Low fat whipping cream

Instructions:

  1. In a large bowl, combine fruit, cheese, and banana chips. Toss lightly to blend.
  2. Fill dessert or disposable bowls with the mix.
  3. Top each dish with wheat germ, lightly sprinkled.
  4. Top each Fiesta Fruit bowl with a dollop of the whipping cream.
  5. Place a cherry or two on top.
  6. Chill until ready to serve.
  7. Place a few graham crackers around the edge of the bowl when ready to serve.

Party Tip - If you are making these in advance, sprinkle a bit of lemon or lime juice on the apples and bananas to slow them from turning brown. It's best to make them the day of the party or event, so the fruit stays fresh.

Dessert involved blue bikini martinis with whipping cream. Everybody left either impressed or shaking their heads at the overkill of blue.
