Who doesn’t like doughnuts? This recipe is from my Father in Law and is included in our cookbook, Celebrate Food!. Whenever we have family visiting from far away he makes these doughnuts for Sunday morning breakfast. Everyone loves them and it’s a treat, because he only makes them a few times a year.
It’s pretty easy to adjust this recipe to fit any size crowd as each roll of biscuits makes 10 doughnuts and 10 doughnut holes (depending on the brand you buy)! Plan on 6-8 doughnuts per person.
Ingredients:
For the doughnuts:
· 1 roll prepared biscuits (in the refrigerated section of the supermarket)
· Crisco or Vegetable oil for frying
For the frosting:
· 2 squares unsweetened bakers chocolate
· 1 rounded tablespoon butter
· 1/4 cup milk
· 1 cup confectioners sugar
Prepare the frosting:
Combine the chocolate, milk and butter in a double boiler or microwave safe bowl and heat until chocolate is fully melted and mixture is smooth. Using a fork mix in the confectioner’s sugar.
Prepare the doughnuts:
For this recipe it’s easier to use a deep fat fryer or electric fry pan if you have one. Otherwise heat about 1 inch of oil or Crisco in a deep fry pan to 350 degrees.
Separate biscuits and flatten slightly with the heel of your hand. Use an empty pill bottle or film canister to cut out the center hole of the doughnuts. Place doughnuts in hot oil and cook about 45 seconds to one minute. Turn doughnuts over and cook 30 seconds more. They should be golden brown when done.
Drain on rack over brown paper bags or paper towels for a minute before dipping in frosting.
Doughnut holes may be cooked the same way.
As a variation you can dust the doughnuts with confectioner’s sugar or cinnamon sugar instead of the chocolate frosting.
