If you're diabetic, on a diet
to loose weight or just watching the kids sugar intake, this
is a great recipe for very low sugar chocolate chip cookies.
This is not a sugar free recipe as it does call for a little
brown sugar, but as brown sugar substitutes are now available,
you can use the substitute to make it a sugar free cookie recipe.
I've even made these for office
parties and no one even knew the cookies were a diabetic recipe!
Diabetic Chocolate Chip Cookies Recipe
- 1 cup margarine
- 1/2 cup brown sugar
- 2 eggs
- 2 tablespoons milk
- 2 teaspoons vanilla
- 2 cups flour
- 24 packets sugar substitute
- 1 teaspoon baking
soda
- 1/2 teaspoon salt
- 2 1/3 cup quick oats
- 1/2 cup chocolate
chips
Pre-heat the oven
to 375.
In a large mixing
bowl cream the margarine and brown sugar until light
and fluffy. add the eggs, milk, and vanilla. beat
well.
in a seperate bowl
stir together the flour, sugar substitute, baking
soda and salt. add the flour mixture to the margarine
mixture and mix well. stir the oats and chocolate
chips into the cookie dough.
drop cookie dough
by heaping spoonfuls on to ungreased sheet pan and
bake at 375 for 10-12 minutes.
