Beef Stew Recipe

I love Beef Stew and this recipe from my grandmother for Easy Beef Stew is a simple one pot meal that is just delicious. I'll often make a big pot as it goes a long way to feed a large family and this beef stew is one of those recipes that seam to taste better the day after you cook it.

Easy Beef Stew

  • 2 pounds beef stew meat diced small
  • 6-8 large carrots, diced
  • 3 stalks cellery, diced
  • 5 medium potatoes, peeled and diced
  • 1 medium onion diced
  • 1 large can (26 ounces) tomato soup
  • 1-2 tablespoons italian seasoning
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • salt & pepper

In a large pot, melt the butter and add the olive oil over high heat. when hot, add the onions & cellery. saute for 2 minutes, add the carrots and saute for 1 minute. add the beef, season with salt & pepper and saute for 5 minutes. add the potatoes, tomatoe soup & 2 cans of water, season with 1-2 tablespoons of Italian seasoning and reduce heat to medium. bring to a simmer then reduce heat to low and continue to simmer slowly for 2 hours. season as needed.

best served with lots of crusty buttered bread!
