Asparagus Spears Side Dish

This is one of our favorite recipes. I love Asparagus and tried for years to get my wife to try it. Needless to say she never would. One day she was out to lunch with a friend and Asparagus spears were served as a side dish. She tried them and now it's become almost a weekly dish. I particulary like to Grill Asparagus in the summer.

Asparagus Recipe

1 pound medium asparagus
1Tbs. Olive oil
1/4 cup Riesling or other sweet white wine
2-3 large cloves garlic, chopped
1/4 teaspoon kosher salt
Freshly ground black pepper
2 Tbs. butter or margarine

Trim the base ends from the asparagus as they tend to be dry and woody.

In a sauce pan, heat the olive oil over medium heat and saute the garlic. Do not allow the Garlic to brown. Add the wine and reduce for 5 minutes. Add the butter, stirring until melted and combined.

Steam the asparagus spears for 3-5 minutes until cooked but still a bit crisp. Remove from steamer pan and toss with wine and butter sauce.

Arange Asparagus Spears on serving platter and season well with Salt and fresh ground Pepper.
